Shepherd's Stew

Shepherd's Stew

3 med. potatoes, peeled and diced
2 small onions, chopped
2 16-oz. cans red kidney beans
1 lb ground beef, extra lean
1 6oz can tomato paste
1 10 oz. package frozen kernel corn
1 16 oz. can chopped tomatoes
salt
pepper

In a large pot, saute the onions and the beef until the onions are transluscent and the beef is no longer pink.
Add the tomato paste and cookl for 10 minutes.
Add the rest of the ingredients to the pot and simmer on low until the flavors are combined and the potatoes are tender (about 8-10 minutes).

VARIATION: I only used one can of red kidney beans and added about 1/4 C Marsala wine (red wine could also be used) which was not in the recipe but my own idea. This stew was quick and easy to make.
