Beef Stew in a Roaster Oven

2 tbl butter
1 1/2 lb chuck roast cut into cubes about 1 inch
4 onions, peeled and "chunked"
16 whole baby carrots
1 stalk celery, cut in chunks
2 cans whole white potatoes, drained
1 pkg dry onion soup mix
1 cup beef stock, DOUBLE STRENGTH
1/2 tsp pepper

GRAVY:
3 tbl cornstarch
6 tbl cold water

Preheat roaster to 425. Melt margarine, then add meat. Cover & cook 10 minutes. (Next time I will coat the meat in flour before this step)
Reduce temp to 225. Add all vegetables. Sprinkle soup mix over top, add broth & pepper. Cover & cook 3 1/2 hours or until tender.
Uncover, raise temp to 350 and pour in the mix of cornstarch and water. Stir and let cook until the gravy thickens.
