14 Bean Soup (Jolea's)
1 cup 14 bean mix(or any type of mixed beans that can include great northern beans, kidney beans, red navy beans, pinto beans, garbanzo beans, blackeyed peas, yellow split peas, green split peas, lentils, black beans, small limas and soy beans)
3 quarts water
1 ham hock or bone
1 large onion
2 carrots
1 stalk of celery
1 large can of tomatoes
1 tsp basil
1/3 cup lemon juice
2 tbsp worcestershire sauce
1 bay leaf
salt and pepper to taste
Rinse beans and soak overnight in 3 quarts water. Cook beans in same water for 1 hour. Add remaining ingredients and cook 2 to 3 hours or until beans are tender. Remove ham hock and return meat to soup. Serve.
I make fresh bread or biscuits to go with this and it is a meal.
