Pasta E Fagioli in the Crock Pot

Pasta E Fagioli


"Fagioli" is the Italian word for beans--here they're combined with pasta and other ingredients for this tasty crockpot soup.


1 Tbsp. olive oil
1 cup chopped onion
19 oz. can white kidney beans; drained
2 garlic cloves, minced
29 oz. chicken broth
2 cups clbow Macaroni; cooked
28 oz. can tomatoes; diced

In a small skillet, saute onion and garlic in olive oil for 3-5 minutes or until tender. Combine all ingredients, except macaroni and grated cheese, in crockpot. Salt and pepper to taste. Cover; cook on LOW for 3-3 1/2 hours. 20 minutes before serving, add cooked macaroni. Turn crockpot setting HIGH and heat through.



Note: Serve with the grated cheese of your choice, if desired.
