Hearty Stew

    Hearty Stew

    2 cans diced tomatoes
    1 smoked sausage (cut in rounds and browned to get fat out)
    1/2 lb. ground beef (cooked & drained)
    1 pkg. frozen soup mix veggies or gumbo mixed veggies
    1 can of chicken meat or 1 chicken breast diced & cooked
    1 envelope onion soup mix
    1/2 onion diced
    2 stalks celery chopped
    2 cups water
    1/4 cup pearl barley or rice
    1 cup fresh sliced mushrooms optional
    Place in a crockpot on high 4-5 hours or med for 6-7 hours

    NOTE: this the is original recipe, but I usually add in leftovers. Had some left over meatloaf, crumbled and subbed for the ground beef, leftover fried or roasted chicken (about 1 cup or close), adding in any leftover veggie with the frozen veggies, and leftover plain rice. Good way to clean out your leftovers! This soup can also be frozen. I make it up we have it twice and IF we have leftovers I freeze it and add it to the next soup.

  • I made this and then reheated and it was even better ... if that's possible!! I love easy recipes lately since I am so busy doing house stuff and ebay. This was a definite winner!
