Beef Steak Soup

    Found 2 steaks in the "use me now" bin and froze em. Got them out , defrosted and browned on both sides. I will cut them in into small 1/2" cubes for the soup. I use a pressure cooker as these aren't the best cut of steak.

    Beef Steak Soup

    4 smaller red potatoes 1/2 or 1/4 depending on size
    1 pkg. frozen soup mix veggies
    1 onion chopped
    2 Tbsp garlic (less if you like)
    1 can diced tomatoes w/ juice
    1 stalk cerery chopped
    3 beef bouillion cubes
    2 Tbsp Worcesshire sauce
    1/4 cup red wine (optional)
    1/2 tsp. basil
    1/2 tsp oregano
    1 small bay leaf
    4 cups water

    Place everything in a pressure cooker and connect lid. over med. high heat bring to a gentle rocking of the weight. May have to slightly reduce heat if it is spazing instead of gently rocking. Cook 10 minutes. Turn off heat and allow to cool until pressure drops. Soup is ready.
    May put into a slow cooker also. Everything goes in and turn on high for 4 to 6 hours or on low for 7 or 8 hours. The cheaper cuts of meat are more tender in a pressure cooker or cooked in the slow cooker for long periods of time.
