Thumbs up Chicken Tortilla Soup

Chicken Tortilla Soup


1 1/2# cooked, shredded chicken
1 28oz can whole tomatoes
1 10oz can enchilada sauce (red)
1 med. onion, chopped
1 4oz can green chopped chilies
2 cloves garlic, minced
2 cups water
1 14.5oz can chicken broth
1 tsp cumin
1 tsp chili powder
1 tsp salt
1/4 tsp pepper
1 bay leaf
1 10oz pkg. frozen corn

Topping:
7 corn tortillas
vegetable oil

Spray crockpot with non-stick spray. Open can of tomatoes and pour all into crockpot. With a potato masher, mash tomatoes. Add all the rest of the ingredients (except topping), stir well, cover and cook on low for 6-8 hours.

For tortilla strips, preheat oven to 400. Brush both sides of tortillas with vegetable oil and cut into strips. Bake in oven for 10-15 mins. til crispy. Serve strips on top of the soup.

We also added cheese as a topping, and you could even add slices of avocado!

I tested this recipe because I love soup and I love to make it. I followed the recipe exact and it was delicious. I will be making this soup often.
