Crock Pot Jambalaya

This recipe was originally posted in June 2007 What’s for Dinner by:

Crock Pot Jampalaya (low carb)
1 chopped Bell Pepper
1 chopped Onion
2 large Tomatoes Chopped
1 Cup chopped Celery
4 cloves garlic, chopped

2 tablespoons minced parsley
4 teaspoons, Italian seasoning
4 teaspoons chilli pepper
1/2 teaspoon salt
2 cups beef or chicken broth

1 can of extra hot Rotel tomatoes
1 pound summer sausage, or your choice

1 pound raw shelled shrimp

Combine all ingredients, except the shrimp and cook in a slow cooker on low 4 hours. Add the shrimp and cook 1 hour longer.

This WILL be spicy, but you can make it milder by adding regular diced tomotoes or regular Rotel tomatoes instead. If you don't want low-carb, add some cooked rice.

This was a great dish the whole family enjoyed. The grandkids even loved it! We all love shrimp and sausage, and together it was a tasty treat. I didn't want it to spicy for the grandkids so I substituted the extra hot tomatoes, using regular diced tomatoes instead. I also used mild Italian sausage instead of Summer sausage. It was still spicy and delicious. I will make this again, it's a great meal on a cold winter day.

I was trying to think of something to fix for this weekend. I think I will make this also and serve with some cornbread as that sounds good too. But, it will take the low-carb out of it. lol
