Tami's Crockpot Chicken Stew

I used my 5 qt. crockpot and layered the following:

first layer : cubed red potatoes (about 1/3 or a little more up the pot)

Third layer: 5 frozen chicken breasts
On top: 1 more can of cream of chicken soup and another sprinkle of poultry seasoning

I cooked this on high for 3 hours and then removed the chicken and sort of stirred the potatoes and carrots. Add chicken and cover again for 2 more hours.
Keep an eye on the last hour of cooking because it will depend on the size of your chicken breasts for how long it will take to cook.

Remove chicken and cut into cubes. Return to pot and stir gently to mix. Serve it in bowls, hence the "stew" name.

Great with warm biscuits!

It was every bit as delicious as the award deserves. You can't rush it though, I tried, and the vegetables took the longest even though they were on the bottom. My dd2 added some spices also (basil, lemon pepper, thyme, rosemary, italian seasoning).

I'm going to try that recipe this week. We love chicken stew but never make it.

Thanks Ellen! I hadn't seen your comments before this.

I haven't made this for a while and wanted to make sure that I remembered everything that I had used for this recipe. I haven't cooked potatoes like this in about 6 mos!
