1 medium potato, peeled and cut into 1/2-inch pieces
1 medium onion, chopped
1 medium stalk celery, cut into 1/2-inch pieces

This is something that I am going to try soon! It gets so hot in my RV in the summer and I do a lot of crock pot cooking. Plus, who doesn't like Canadian bacon?

Me, too! It might help me like lentils more than I do. One good recipe will do it for me.

I had bought Thyme when the recipe was first posted as I didn't have any. Thanks for the reminder will make it this weekend as I do have everything on hand to make it but will use thinly sliced ham instead of the Candian Bacon as it runs $4 for 6 oz at the grocery.

Roberta, thanks for the hint to use ham instead of Canadian bacon. I can't find it here. Ham should do nicely.

Oh my goodness...I just found out today that I got a Chef Guy... Thank you soo much for the award. It especially means alot since I do not get to cook as often as I used to. I hope you all enjoy this soup.
