Refried bean soup



Refried Bean Soup

Ingredients:

1 28 oz can diced or crushed tomatoes
2 cloves of garlic, minced
1 cup of finely chopped onion
1 cup of chicken broth
1 14 oz can of chicken broth
2 cans refried beans

Directions:

Combine tomatoes, garlic, onion, and 1 cup chicken broth in large pan;
boil five minutes, stirring often.

Stir in beans and broth; simmer over low heat for 20 minutes, stirring
often.

For variations add:

scallions
sour cream
jalapenos
corn

We really liked it! It was quite different using the refried beans! Some changes I made were I used fat free refried beans and low sodium chicken broth. I put some bowls of chopped green onions, sour cream and salsa on the table to top each bowl with. We really enjoyed it as a great lunch. I plan on using this with some chicken breast sandwiches one day when some friends come up to visit. I will be able to have everything for the soup in the pantry!

I just hand copied this Refried Bean
soup sounds really good. But oh how hand is hurting
