Hamburger Soup

Hamburger Soup

1 pound ground beef
1/2 medium onion, chopped
1 stalk of celery, diced
2 handfuls barley
3 large carrots, diced
1 parsnip, diced
2 medium turnips, diced
3 medium potatoes, diced
2 beef boullion cubes
15 oz can diced tomatoes
salt & pepper to taste
1 tsp summer savory
1 tsp basil
1 tsp thyme

Brown the ground beef in a dutch oven with the onion and celery. Drain off excess fat. Add enough water so that there is about a third of the pot full. Over medium heat, bring to a boil, then reduce to simmer.

Add remaining ingredients, simmer until vegetables are tender, about an hour or so. (Note: My family does not like tomato chunks in their soup, so I put this through the blender first.) Add enough water to have pot 3/4 full.

Note from author: When you serve, you may add a couple of tablespoons of grated marble cheese. I make biscuits to go with this just before ready to serve and you have a hearty, hot and inexpensive meal - with leftovers for lunch the next day.
