Helen's Cracker Jacks

First pop enough popcorn to make 6 quarts.( I like to use a better grade of popcorn so the pieces are big.)

Next make syrup:
1c. butter(2sticks)
2c. packed brown sugar
1 1/2 C. corn syrup(clear)
1 tsp. salt
1/2 tsp. baking soda
1tsp. vanilla
Melt butter, add syrup,brown sugar,salt . bring to a boil takes about 5 mins. to hard stage.260 degrees. Remove from heat.

Add soda & vanilla, beat well so it foams really well.

Stir in popcorn.(add peanuts if you desire)

Place on cookie sheet 14x9(I always spray sheet with Pam first)

Oven Bake in 250degree oven for 15 mins, turn over mixture, bake another 15 mins, turn over again. Do this 2 more times. Time in oven should equal 1 hr.

Let cool, then break apart, so there aren't any big chunks.

I always use light corn syrup, I like lighter color Cracker Jacks, but you can use the darker color if you prefer.

I store the Crackers in Tins...it makes a great gift .
