What to do with all those Pecans......

Caramel-Pecan Pie

1 9-inch unbaked pie shell
2/3 cups sugar
1/4 cup butter or margarine, melted
3 eggs
1 jar (12 ounces) Smucker's Caramel Topping
1-1/2 cups pecan halves

In mixing bowl, beat eggs slightly with fork. Add sugar, stirring until dissolved. Stir in topping and butter; mix well. Stir in pecan halves. Pour filling into pie shell. Bake at 350 F for 45 minutes or until knife inserted off-center comes out clean.

Cool thoroughly on rack before serving. Cover; chill to store.

Easy Pecan Pralines


You will need:

1 1/2 Tablespoons butter

16 ounce bag chopped pecans

1- Cup sugar

1 1/4- Cups brown sugar

6- Tablespoons water


In medium saucepan combine sugar, water and butter. Turn burner to low heat, when mixture begins to boil rapidly, add the pecans. Continue to boil stirring constantly, until mixture forms large bubbles on top and has thickened. Remove from burner, then drop by teaspoonfuls onto well-buttered cookie sheet or wax paper. Let cool for two hours then serve.

Chocolate Pecan Creams
1 pk Semi-sweet chocolate
1 c Sifted confectioners sugar
1 Egg; well beaten
1 tb Milk
Assorted decorations*
1/3 c Pecans, finely chopped

Melt chocolate in saucepan over very low heat; stirring constantly. Remove from heat.

Add sugar, egg and milk; beat until smooth. Chill until firm enough to handle, about 30 minutes.

Shape into 1/2" balls; roll in finely chopped pecans.
