Vanilla Popcorn

In a large heavy pot, heat corn oil over high heat until the oil
smokes. Add 1 kernel popping corn and heat until kernel pops. Add vanilla bean and rest of popping corn, cover pot, and shake gently until corn starts to pop. Shake vigorously until popping subsides. Remove from heat. Remove vanilla bean and toss popcorn with sugar, salt, and melted butter. Scrape seeds from vanilla bean and add to popcorn.

Helen's Cracker Jacks

Syrup} 1cup butter(2 Sticks)
2Cups firmly packed brown sugar
1 1/2 cups corn syrup (clear)
1tsp. salt,1/2 tsp baking powder,1tsp.vanilla

Popcorn} 6 qts. of popcorn (already popped)

Melt Butter: Add brown sugar, corn syrup, &salt. Bring to a boil about 5 mins. to a hard stage, 260degrees.

Remove from heat.

Add soda, & vanilla-beat well till it foams really good.

Stir in popcorn(already popped); Place on cookie sheet 14x9 in 250 degree oven, Bake 15 mins, turn popcorn over in pan, bake another 15 mins. then turn popcorn over again, and bake another 15 mins. and once again for 15 mins. 1 hour of baking all together. ( you can even add nuts if you like.)

Cool and break it up and store in metal tins, works best.

I got this recipe from a dear lady who is now with the Lord...Bless her heart.

This makes a great gift for Xmas, my family loves to get a tin of homemade Cracker Jack. I like to use good quality popcorn...
