Rhubarb Fritters


    1 cup all purpose flour
    1 cup plus 1 TBSP. sugar, divided
    1/2 tsp. salt
    2 eggs, separated
    1/2 cup milk
    1 TBSP. butter, melted
    2 cups finely chopped rhubarb
    powdered sugar

    Combine flour, 1 cup sugar, and salt, mix. In another bowl whisk yolks, milk, and butter. Gradually add to dry ingredients stirring till smooth. Toss rhubarb with remaining sugar and gently stir into batter. In mixing bowl beat egg whites until stiff and fold into batter. Heat oil to 375. Drop by tablespoonfuls into oil. Fry until golden brown. Drain on paper towels and dust with powdered sugar. Serve warm.
