How surprised when I tried this recipe from Leisure Arts' Gifts That Taste Good, 1990-91. Very easy and very tasty. Watch though, go sparingly on the coarse salt.

4 1/2 cups shelled raw peanuts
2 cups granulated sugar
1/2 teaspoon salt
1 cup water
Coarse salt

Place peanuts, sugar, 1/2 teaspoon salt, and water in a heavy bottomed saucepan or dutch oven and bring to a boil. Continue to boil until all liquid is absorbed, about 25 to 30 minutes. (My mixture was kind of sticky).

Preheat oven to 300F. Spread peanuts on a greased jelly roll pan and sprinkle with coarse salt. Bake 20 minutes. Remove from oven (here I broke apart any clusters that formed), stir, sprinkle with coarse salt again, and bake 20 minutes longer. Cool completely. Store in an airtight container (I used a jar).

Yield: about 4 1/2 cups nuts.
