Backseat Snacks for Road Trips

Makes 6 (2/3 cup) servings


5 ounces (about 4 cups) mini pretzels
2 teaspoons Smart Balance magarine, melted
4 teaspoons low-salt soy sauce
1/4 teaspoon cayenne pepper
1 teaspoon garlic powder
1/2 teaspoon parsley

Preheat oven to 350 degrees. Toss the pretzels with melted Smart Balance, spread on a rimmed baking sheet and bake for 4 minutes. Sprinkle with the soy sauce, cayenne, parsley, and garlic powder. Toss to coat well then bake 3 minutes. Remove pan from oven and let cool on a rack. When completely cooled, store in a tightly-sealed container.

kcqueenm - when I first saw the title on this thread I thought of carrots as a snack but then remembered how my kids invariably would crack a joke and the other would spew carrot pieces all over the back of my head....so....my input would be that whatever you serve, serve some napkins and drink with it! the recipe you posted sounds delicious...mmmmm

We keep a lunchbox in the car filled with granola bars and peanut-butter cracker packs. If someone is hungry they can take a snack from the lunchbox. When it starts to get empty, the kids are supposed to bring it in the house so it can be refilled.

Barbszy, I do the same thing, there is always a stash of granola bars and peanut butter crackers in my car. i also keep things like packages of dried fruit (my favorite are dried cherries or apricots) and small honey roasted peanut packs or almond packs my my car as well as bottled water.

Here is a healthy snack for children and adults alike that I got from Alton Brown's show on the Foodnetwork. My GKs love these and I make them for road trips, tailgating, and so on.

Brown Rice Crispy Bars


3 ounces puffed brown rice, approximately 6 cups
3 tablespoons flax seed oil, plus extra for the pan
1 tablespoon orange blossom honey
7 ounces mini marshmallows, approximately 4 cups
3 ounces toasted slivered almonds, approximately 3/4 cup
1 1/2 ounces coarsely chopped dried cranberries, approximately 1/3 cup
1 1/2 ounces coarsely chopped dried cherries, approximately 1/3 cup
1-ounce dried blueberries, approximately 1/3 cup

Lightly coat the inside of a 13 by 9 by 2-inch metal pan with oil and set aside. Preheat the oven to 425 degrees F.

Spread the brown puffed rice evenly on a sheet pan. Toast in the oven for 4 minutes, stirring occasionally. While the rice is toasting, prepare the marshmallow mixture.

Place the oil, honey, and marshmallows in a large mixing bowl set over a pot of gently simmering water. Stir until the marshmallows are melted, approximately 4 to 5 minutes. Once the marshmallows are melted, quickly add the toasted brown rice, almonds, and fruit and stir to combine. Coat your hands or a spatula with oil and spread the mixture evenly into the pan. Once the mixture has cooled completely, cut into squares and store in an airtight container for 1 to 2 days.
