Rice Dressing Recipes

When DH & I married, I had not yet met most of his family. I had only met one sister, BIL and 2 nieces. At the first family get together that we attended, I was trying to make "homemade" rice dressing using livers and everything. My oldest SIL came up and said "There is an easier, lazier way to make it. I'll show you how." Here is the recipe she gave me:

Rice Dressing

1 lb. ground beef (80% lean is best to use)
1 cup raw rice (not instant!)
1 can Cream of Mushroom soup
1 can French Onion Soup

Mix together well. Pour into a 2 qt. covered casserole
dish and bake in a preheated 350 F oven for one hour.
Can add Tony Chachere's to taste if desired.

Later, DH's aunt gave me a copy of a local church cookbook. I found a recipe in there that we like better. It is easy to make and is much tastier.

Oven Rice Dressing
From : Cherished Recipes, St. Joseph's Catholic Church

1 lb. ground beef (at least 80% lean)*
1 c. raw rice (not instant!)**
1 can Golden Mushroom Soup
1 can onion soup
1 stalk celery, minced
1/4 cup minced bell pepper
2 pods garlic, peeled & minced
1/4 cup green onion tops, chopped
salt & pepper to taste***

Combine all ingredients in a 2 qt. casserole dish and
cover. Bake at 350 F for one hour. Serves 6.

*sometimes I use 1/2 lb. ground beef and
1/2 lb. ground pork

**we use medium grain rice.

*** I usually add about 3 tablespoons of salt-free
Tony Chachere's as seasoning. The soups have
a lot of sodium so I usually do not add salt.

Rice Dressing

1/2 c. flour
1/2 c. shortening
1 lb. chicken livers, ground
1 lb. chicken gizzards, ground
1/2 lb. lean ground pork
1/2 c. finely chopped onion
1/2 c. finely chopped bell pepper
1/4 c. finely chopped celery
1 tsp. finely chopped garlic
1 TBSP. finely chopped green onion tops
1 TBSP. finely chopped parsley
2 slices bcon, fried crisply & crumbled
3 c. rice, cooked

Mix flour & shortening over a low fire, stirring continually
until brown. Then, add ground livers, gizzards and pork.
Let cook until brown. Next, add onions, bell pepper,
celery & garlic. Season to taste with salt & pepper. Cook
over low heat for 1/2 hour. Remove from heat and add
onion tops, parsley and bacon, stirring thoroughly. Now,
add rice and mix well. Serve.
Hook 'Em Horns!!!!
