8 medium ears of fresh corn (or 4 c. frozen corn, defrosted)
1 medium onion, chopped (about 1/2 cup)****
1 small sweet green pepper, chopped (about 1/2 cup)
2 Tablespoons butter (or margarine)
1 medium tomato, chopped
1/4 teaspoon salt
1/4 tsp black pepper
1/4 to 1/2 teaspoon red pepper (depending on your taste)
Clean corn thoroughly. Using a shape knife, remove corn from cobs - cutting 2/3 of the way to the cob. Scrape cobs with dull edge of knife. (you should have about 4 cups of corn) In a 3-quart saucepan, cook onion and green pepper in margarine about 5 minutes or until tender. Stir in corn, tomato, salt, black pepper and red pepper. Cover and cook over low heat about 20 minutes or until corn is tender. Add more salt or pepper as needed to your taste. Makes about 6 side-dish servings.
