Crowd Size Side Dishes

Have a recipe that makes a large amount? Sometimes we are looking for those type of recipes for gatherings. If you have some side dishes please post here! Thanks!


Cheddar and Chive Smashed Potatoes Makes 20 servings

7 pounds red potatoes, scrubbed and cut into quarters
2 tbsp salt
8 tbsp margarine or butter (1 stick)
3 cloves garlic, finely chopped
1 3/4 cup milk
2 tsp salt
1/2 tsp pepper
8 oz sharpo cheddar cheese, shredded (about 2 cups)
1 1/2 cups sour cream
1/2 cup chives

In a 8 quart pot, add potatoes and water to cover by 1". Cover pot and heat to boiling on high. Add 2 tbsp salt. Reduce heat to medium and cook potatoes partially covered about 30 minutes or till tender. In a 2 quart pan melt margarine and add garlic. Cook 1 minute ortill golden, stirring. Stir in milk and heat 1 minute. Remove from heat and set aside. Drain potatoes well and return to pot. Add milk mixture, 2 tsp salt and 1/2 tsp pepper. With a potato masher, mash till smooth. Stir in Cheddar, sour cream and chives. Serve hot.

Stovetop Green Bean Casserole Makes 20 servings

5 pounds green beans, trimmed
3 tbsp olive oil
3 tbsp margarine
1 jumbo onion, finely chopped
1/2 tsp salt
1/2 tsp pepper
3 pounds mushrooms, sliced
3/4 tsp salt
1/3 cup all purpose flour
3 cups milk, warmed
1 tbsp thyme
1/8 tsp cayenne pepper
3/4 cup crunchy fried onions

Heat a 7 quart pot of salted water to boiling. Add green beans and cook 5 to 10 minutes or till tender crisp. Drain and transfer to a serving dish. (The beans can be made ahead, cooled, covered and refrigerated up to 3 days. Reheat before preceeding with recipe). In a large skillet heat oil and margarine till margarine melts. Add onion, 1/2 tsp salt, and 1/2 tsp pepper. Cook 6 minutes or till golden and tender, stirring occasionally. Stir in the mushrooms and and 3/4 tsp salt and cook 8 minutes or till tender and juices have released and started to evaporate, stirring occasionally. Add flour and cook 2 minutes stirring, then add milk in slow steady stream, stirring. Heat to boiling and cook 2 to 5 minutes or till thickened, stirring frequently. Stir in thyme, and cayenne. Spoon over green beans and top with the onions.
