Sweet Potato Casserole Recipes

AUNT POLLY'S SWEET POTATO CASSEROLE

Serving Size : 10 Preparation Time :0:00

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
2 lb Sweet potatoes, boiled,
-peeled, and mashed
2 Eggs, beaten
2 oz Margarine, melted
1/2 c Brown sugar
1 c Buttermilk
1/4 ts Baking soda
1/2 ts Nutmeg and cinnamon

Combine all ingredients and mix well. Will be very
soupy. Bake at 350F for 1 hour. Yields about 10
servings.

Sweet Potato Casserole

2 Lg. (40 oz) cans sweet potatoes (drained)
1/2 cup sugar
1/2 cup marg. or butter
2 eggs (beaten)
1 tsp. vanilla
1/3 cup evaporated milk

Topping:
1/3 cup melted marg. or butter
1 cup light brown sugar
1/2 cup flour
1 cup chopped pecans

Mix up the casserole ingredients...do eggs first then add the rest of the ingredients. I have a big mixer, so I just mix it in that...it won't be totally smooth but you won't have the big chunks of sweet potatoes...grease a glass pan (square pryex) or oblong one... spoon mixture in..Mix topping ingredients together and sprinkle over top...can be prepared earlier in the day or day before and left in the refrigerator...Bake UNCOVERED at 350 for about 25 minutes...or longer if
necessary.

Whipped Sweet Potato Casserole

2 pounds sweet potato, peeled and cubed
2 tablespoons orange juice
3/4 cup brown sugar
1/8 teaspoon ground nutmeg
2 tablespoons butter, cubed
1 cup miniature marshmallows

Preheat oven to 350 degrees F (175 degrees C). In a
large saucepan cook sweet potatoes in salted water
over medium-high heat for about 20 minutes, or until
done. Drain, and add orange juice, brown sugar,
nutmeg and butter. Whip until smooth. Spread into a
medium size casserole dish and top with marshmallows.
Bake in preheated oven for about 10 minutes, or until
marshmallows are golden brown.
