Gingered Baked Papaya

1 large or 2 small papaya
3 tbsp butter
1 1/2 tbsp line juice
2 tsp freshly grated ginger root

Cut small papaya in half. Quarter them if they are still very large. Scoop out the seeds. Combine butter, lime juice, and grated ginger root in a saucepan. Heat till butter is melted. Arrange papaya in a crock pot. Spoon gingered butter in cavties of each. Cover. Cook on HIGH 1 1/2 to 2 hours or till tender. Baste once or twice with butter mixture. Serve hot. This is a great side dish to roast chicken or pork. Makes 4 servings
