Crock Pot Baked Beans

1 - 16 oz, pkg dried navy beans, rinsed and sorted
1 cup water
1/2 cup onion, chopped
1/2 cup molasses
1/3 cup firmly packed brown sugar
1 tsp salt
3 tsp dry mustard
1/2 tsp liquid smoke

In a dutch oven combine the beans and 10 cups of water, bring to a boil. Reduce heat, cover and simmer for 2 hours( I like to do this part the night before and then refrigerate them till the next morning to start the crock pot portion of the cooking). Drain and discard the liquid. In a 4 qt. crock pot combine the drained beans, 1 cup water and all remaining ingredients and stir well. Cover and cook on LOW for 10 to 12 hours. Makes 10 1/2 cup servings
