3 lb. smalll red potatoes
4 garlic cloves, minced
2 tbsp olive oil
1/2 cup water
1/2 cup cream cheese with chives and onions (from 8 oz tub)
1/4 to 1/2 cup milk
Quarter potatoes to make them all the same size. Place in a 4-6 qt. crockpot. Add garlic, oil, and water; mix well to coat potatoes. Cover and cook on HIGH 3 1/2 to 4 1/2 hours or till potatoes are tender. Mash potatoes and garlic. Stir in cream cheese till blended. Stir in enough milk till desired consistency. Serve immediately or hol in crockpot on LOW setting up to 2 hours. 14 (1/2 cup) servings
