    Mexiciali Quiche

    9" pie crust
    1/2 lb shrimp or other meat, plus 6 for decoration
    1-4 oz can green chillies
    1/2 c grated cheddar cheese
    1/2 c grated jack cheese
    3 eggs
    1/3 c chives, chopped
    1/3 c sour cream, plus 1/2 c for decoration
    2 T taco sauce, or salsa, for decoration
    pinch of salt

    Cut shrimp up small, place in pie crust and cover with chives and 1/2 cheese. Combine sour cream, eggs, cheese, and salt: pour over crust evenly. Bake at 425 degrees for 15 minutes, then drop to 300 degrees for 35 minutes or until set. Remove and rest for 15 minutes. Place 6 dollops of sour cream between denter and edge. Dip each shrimp in sauce and put a shrimp in each dollop, then serve.
