Salmon Cakes with Lemon Herb Mayo

1/4 c. EACH: red pepper, green onion (both finely chopped)
1/4 c. mayonnaise
1 tbs. fresh lemon juice
1/4 tsp. seasoned salt
cayenne pepper
1 beaten egg
1 c. dry bread crumbs
2 cans (6 oz. ea) skinless, boneless, pink salmon
3 tbs. butter

In small mixing bowl, combine chopped red pepper, green onion, mayo, lemon juice, seasoned salt and cayenne pepper. Taste and adjust seasonings to personal preference. Stir in egg, well drained salmon and 4 tbs. bread crumbs. dirive and form into 6-8 balls. Roll salmon balls in remaining bread crumbs. Flatter into cakes (about 2" thick). Fry salmon cakes in melted butter in skillet over mediuim heat for 3-4 min. per side. Serve with lemon herb mayonnaise.

Lemon Herb Mayonnaise:
3/4 c. mayonnaise
1 tbs. fresh lemon juice
1 tbs. prepared horseradish
2 1/2 tsp. fresh thyme
salt and pepper to taste

Combine ingredients in a small bowl and blend well.

janet's Salmon Patties

Salmon Patties

1 can of salmon, drained.

1 cup dry..Stove Top Dressings(savory herb is great!)

2 Eggs

Squirt of Lemon juice, or 1/2 fresh lemon squeezed.

Spices: Pepper, Mrs Dash; salt (if you use.)

note* If I use Savory Herb Stove Top, I don't use any more herbs..it is really up to your taste buds.

1. Drain salmon and place in a mixing bowl...crush up bones with your hands...that gives you extra calcium...(optional)

2. Add, Stove Top Dressing-DRY*

3. Beat 2 eggs, add to mixture.(I use Egg Beaters too!)

4. Add extra spices if desired.

5. Shape into patties, cook in a pan sprayed with Pam Spray. As the one side is browning, I put a dab of margarine on the uncooked side . Flip the patties gently, and cook till that side is golden brown.

NOTE* TO MAKE THIS RECIPE STRETCH FARTHER...YOU CAN ADD MORE DRY DRESSING MIX AND A LITTLE MILK...IF YOU CAN'T GET A PATTY FORMED IN YOUR HANDS...ADD ANOTHER EGG.

Suggestions: I have also made Pesto sauce...to drizzle over the top of the salmon patties, & have served it with a small portion of pasta, and broccoli. (with a drizzle of Pesto)

2 lbs. salmon, chopped
1 c. fresh tomatoes, diced
1 c. roasted red peppers, diced
1 c. roasted yellow peppers, diced
1 c. red onions, diced
2 c. mayonaise
1 oz. lemon juice
1 T. mustard
1 T. pepper
2 c. bread crumbs
2 eggs
1 c. cilantro
Bread crumbs to coat

Mix all ingredients together thoroughly. Portion to 1 1/2 oz. and coat with breadcrumbs. Saute' until golden brown (app. 1 1/2 min. each side ) Finish by baking in a 350 degree oven for about 5 minutes or until warmed through.
