Cajun Scallops over Penne

Very simple yet pretty enough to serve to company !!

Canjun Scallops over Penne

1lb lg. scallops
8oz. fresh, sliced mushrooms
1lb cooked penne pasta
cajun seasoning
olive oil

Add mushrooms to pan. Drizzle with olive oil and sprinkle (liberally if you like it with a "kick") with cajun seasoning. Fry until partially soft. Remove from pan with a slotted spoon into a dish --cover to keep warm. Add scallops to pan, drizzle with more olive oil and cajun seasoning. Cook until done. Put the cooked penne into a lg. dish or pot. Add mushrooms, scallops and all of the juices from the pan to the pasta and toss to coat. At this time I usually add more oil and cajun seasoning. It needs to be coated but not swimming in the oil.
This is a fast dish to prepare and in order to keep things warm enough to enjoy, have the pasta cooked and covered to keep warm and work rather fast with the other food. Sometimes I even work with 2 skillets to make things go faster. Serve with a crisp salad and crusty bread.
