Fish in Foil

This recipe was originally posed in June, 2014 What's for Dinner by cat lover.

Fish in Foil

1 lb fish fillets
2 tbsp butter
1/4 tsp black pepper
1/4 cup lemon juice
1/4 tsp paprika
1 tbsp fresh parsley,chopped
1 onion, thinly sliced
1 tsp fresh dill weed
Use heavy duty foil cut into large squares. Place equal portions of the fish fillets on each piece of foil. In a saucepan, melt butter. Add lemon juice, parsley, dill, and pepper. Stir to blend well. Pour this mixture over the fish, sprinkle with paprika, and top with the onion slices which have been separated into rings. Fold the foil around the mixture and seal tightly. Leave a little space for the food to expand while cooking. Place on hot grill and grill for 5-7 minutes per side.

Going to do potatoes in foil also.

2 potatoes, sliced into 1/2" slices
1 onion,sliced into rings
1/2 cup parmesan cheese
1/2 cup pepper jack cheese
4 tbsp butter

On heavy duty foil place potatoes and toss everything else together and pile on top of potatoes. Fold and seal packets tightly leaving a little space for heat expansion. Place on grill rack or right on hot coals in a campfire! Should cook in about 20 minutes.

Cat Lover and Seleach... what a mouth-watering sounding recipe!

We almost always do fish in tin foil, and we're never disappointed.
