Asian Glazed Salmon

Asian Glazed Salmon

1 pound thawed or fresh skinless salmon fillet
1/3 cup Splenda brown sugar
2 tbsp reduced sodium soy sauce
1 tbsp Dijon style mustard
3 tbsp rice vinegar

Rinse fish and pat dry. Cut into 4 serving size pieces. For the glaze, combine the brown sugar, soy sauce and mustard. Set aside 2 tbsp of this for he sauce. Preheat the broiler and put fish on an unheated broiler pan. Broil 4" from heat about 8 to 12 minutes or till fish flakes easily with a fork. Turn only once during the cooking process. Brush with the glaze the last 2 to 3 minutes of cooking.

For the sauce, stir together the rice vinegar and reserved brown sugar mixture till the sugar is dissolved. Serve with the salmon.
