Parmesan & Almond Encrusted Tilapia with Lemon

Parmesan and Almond Encrusted Tilapia with Lemon

Ingredients
3 eggs,
2 tsps lemon pepper,
1 tsp garlic salt,
1 cup of sliced almonds ground up
2 cups freshly Shredded Parmesan cheese,
8 (about 6 oz. each) Tilapia filets,
some all-purpose flour for dusting,
about 6 tbsp. butter to cover the bottom of your skillet..,
another cup of shredded Parmesan cheese,
8 sprigs of parsley,
8 lemons.... all cut in half.

Beat the eggs with the lemon pepper and garlic pepper until they are blended; set aside. Stir together ground almonds with 1 cup of Parmesan cheese in a shallow dish until combined; also set aside. Dust each Tilapia filet with flour and shake off the excess flour...then dip the tilapia in the egg mixture, then press into the almond mixture.

Melt butter in a large skillet over medium-high heat... cook tilapia in melted butter until golden brown on both sides.. which is about 2 to 3 minutes per side depending on size of filet. Reduce the heat to Medium, and sprinkle more Parmesan cheese on top of each side as desired until cheese melts (about 5 minutes). Remove from heat.
Garnish with Parsley sprigs and lemon wedges to serve.
