Cod with Vegetables

cat lover originally posted this recipe in What's for Dinner December 2009


Cod with Vegetables

cooking spray
1 pound cod fillets cut into 4 serving size pieces
2 medium potatoes each cut into 8 wedges
2 bell peppers, halved & seeded
2 medium onions, cut into 1/2" slices
2 tbsp lemon juice
1/4 tsp pepper
1/4 cup plain bread crumbs

Heat oven to 500 degrees(yes that temp is correct); and spray pan (15 x 10 x 1")with nonstick spray. Put fish in a single layer in center of the pan. Arrange potatoes around fish, peppers skin side down, then onion slices around the potaotes, Sprinkle lemon juice over fish and pepper fish and vegetables. Sprinkle the bread crumbs over the fish and onions only and then spray the fish and all vegetables with cooking spray. Bake at 500 degrees 10 minutes or till fish flakes easily and vegetables are crisp tender. 4 servings http://www.familycorner.com/forums/i...c/progress.gif .
