Skillet Seared Salmon

cat lover originally posted this recipe in What's for Dinner February 2009.

5 5 oz skinless salmon fillets, 1" thick
1 tbsp olive oil
4 large roma tomatoes, coarsely chopped (recipe called for seeding them; I skip that)
1 jalapeno pepper seeded and sliced
1 tbsp butter
Lightly season salmon with salt and pepper ( I skip the salt). Heat olive oil in a nonstick skillet and add salmon. Cook 8 to 10 minutes or till salmon easily flakes. Turn only once during cooking. Transfer salmon to a platter. Add tomatoes, jalapeno and butter to skillet and cook and stir about 1 minute. Spoon over the salmon. Serves 4
