Roasted Cod with Leeks & Cider Butter

as posted by cat lover in WFD 08/06:

Roasted Cod with Leeks and Cider Butter
4 7oz pieces of cod
2 oz butter or margarine
3 leeks, medium, trimmed and thinly sliced (I sometimes just use green onions here)
1 small onion, thinly sliced
7 oz cider
2 tbsp olive oil
salt and ground black pepper


Preheat the oven to 375 degrees.Heat the butter in a frying pan and saute the leeks and onion for about 5 minutes over a medium heat, till softened but not browned. Add the cider and cook until the liquid has almost evaporated.Drizzle a little olive oil into a roasting pan and tip in the leeks and onions. Arrange the fillets of cod on top and season with a little salt and black pepper.Roast in the oven for 10 to 12 minutes till the fish is cooked. To make sure that it is done, check that the flesh looks opaque and flakes easily when tested with a fork. 4 servings
