ISO Fish Based Recipes

can you tell me a good fish based recipe? i want to learn my kids to eat more fish based products instead of meat (beef, pork, chicken etc). i think that fish is more healthier for health than other kind of meat. to use them with fish i bought a beautiful animal themed plates. The plates are durable and 100% microwave, oven and food safe. i look forward for your replies.

I have lots of fish recipes, but I need to know is there a particular type of fish that you want to use or lots of different kinds? Let me know and I'll be happy to share with you! Here are a couple that might get you started!

Flounder Fillets in Foil

4-5 oz flounder fillets
1 tbsp margarine
1 tbsp chopped green onion
1/2 lb. mushrooms, chopped
3 tbsp dry white wine
1 tbsp lemon juice
1 tbsp chopped fresh parsley
vegetable cooking spray (like Pam)
1/2 tsp.black pepper

Rinse fish, pat dry and set aside. Make a mushroom sauce by spraying a nonstick skillet with cooking spray. Place over heat, add margarine, green onions and suate till soft. Add mushrooms and cook 5 minutes. Stir in wine, lemon juice and parsley and cook till most of liquid evaporates. Preheat oven to 400 degrees. Lightly spray four pieces of heavy duty aluminum foil with cooking spray. Place a fillet on each piece of oil, season with pepper. Spoon mushroom sauce evenly over each piece of fish. Seal foil into packets around fish. Bake 20 minutes or till fish flakes. Serve in foil on plates.

Variations instead of mushroom sauce:

Spinach, frozen
lemon juice
nutmeg
margarine
OR
tomato, thinly sliced
onions, thinly sliced
basil
lemon juice
margarine
OR
cucumber, thinly sliced
lemon juice
fresh dill , chopped
margarine
OR
celery, thinly sliced
lemon juice
thyme
margarine

Crispy Baked Fillet of Sole

1 1/2 lb sole fillets
3/4 cup finely chopped onion
1/2 cup canola oil
1/4 cup lime juice
2 tsp grated lime rind
1 tbsp grated fresh ginger
1 tbsp light soy sauce
1/4 tsp salt
1/4 tsp black pepper
vegetable cooking spray
1 1/4 cups plain bread crumbs
2 tbsp finely choipped fresh parsley
2 tbsp finely chopped green onion

Rinse fish and pat dry and set aside. In small bowl, mix onion, oil, lime juice and rind, ginger, soy sauce,salt and pepper. Set aside. Lay fillets in baking dish and pour liquid mix over all turning fish to coat evenly. Cover and refrigerate several hours or overnight. Preheat oven to 450 degrees. Lightly spray a baking dish with vegetable oil. In a pie plate, combine bread crumbs. parsley and green onions. Mix and set aside. Remove fish from marinade and dredge in crumb mixture. Place fillets in prepared baking dish and bake 15 to 18 minutes or till fish flakes easily with a fork. Serves 6
