Jing’s Spicy Deep Fried Shrimps
Jing’s Spicy Deep Fried Shrimps

1lb Jumbo/large shrimp – skin peeled off

¼ tsp. salt

¼ tsp. ground black pepper

½ tsp. cayenne pepper

½ tsp. garlic – minced

4 eggs, beaten

2 cups all-purpose flour

½ tsp. baking powder

3 cups frying oil

1/2 cup – your preferred beer

Make two different mixtures of eggs and beer. First, set aside one bowl with two well beaten eggs and beer. Do the same for the second bowl and set aside. Dip the shrimp into the first mixture and leave for five minutes to marinate. Mix salt, ground black pepper, cayenne pepper, and minced garlic. Pour into a gallon size freezer bag. Remove shrimps from marinating and pour into the freezer gallon bag and shake to coat evenly and then pour into the second mixture of eggs and beer.

Combine baking powder and all-purpose flour. Remove shrimps from the second mixture roll shrimps into the baking powder and all-purpose flour. Shake shrimps to remove any excess flour mixture on the shrimp. Set deep fryer to high for five minutes and adjust heat to medium/high heat. Add frying oil and let it set for five to ten minutes allowing the frying oil to be very hot. One at a time, drop shrimp into the hot oil and cook until golden brown. Only drop so many and do not overcrowd the deep fryer. Jing’s Spicy Deep Fried Shrimps can be served with white or fried rice.
