Cajun Catfish Burger

Cajun Catfish Burger
1 tsp. each: cumin, garlic powder,
onion powder, dried oregano,
and dried thyme
1 tsp. Salt (optional)
1/2 tsp. sweet paprika
1/4 tsp. cayenne pepper (optional)
1/4 tsp. freshly ground black pepper
1/4 cup low-fat mayonnaise4 3-oz. pieces catfish fillet
3 Tbsp. yellow cornmeal
1 Tbsp. canola oil
3 romaine lettuce leaves, finely shredded
8 thin tomato slices
4 hamburger buns (preferably whole-
wheat), toasted

In a small bowl, combine all spices and salt, if using, together. Mix 1 tablespoon of the spice mixture into the mayonnaise for a seasoned mayonnaise to use on the sandwich. Set it aside.

Lightly rub each side of the fish fillets with the dry spice mixture and let them sit for 10 minutes. (This spice mixture is also delicious on other kinds of fish, as well as chicken and pork.)

Lightly coat the fish with the cornmeal. Heat the oil in a medium skillet over medium-high heat. Sauté the fish until it is browned on both sides. Reducing heat, if necessary, cook until the fish is opaque in the center at the thickest points, about 4 to 5 minutes.

Spread a thin layer of the seasoned mayonnaise on the bottom and the top of the buns. Cover the bottom of each bun with some of the lettuce. Add a slice of tomato to each. Add the fillet and top it with another tomato slice. Serve immediately.

Makes 4 servings.

Per serving: 317 calories, 14 g. total fat (3 g. saturated fat), 31 g. carbohydrate, 18 g. protein, 4 g. dietary fiber, 383 mg. sodium. *****
