2 Basic recipies

I know 2 basic recipies for preparing fish. Not that I'm complaining. They are good. I'm just tired of them LOL!

First is a terriaki sauce in a frypan with a little orange juice and ginger..and you sort of poach whatever fillet comes your way...

The sugar content in this dish gives the fish ( and the pan ) a nice crust LOL!.

The second way I make fish is in a foil packet. I jullienne veggies and slice lemons and wrap fish with this, butter wine and lemon juice and bake it on a cookie sheet at 400 for about 20 minutes. It comes out very juicy and flakey.


But that has been my repitoire....

I have no clue how to get that buttery bread crumb topping on scrod... ( mine comes out soggy) or how to fry fish without it tasting oily and wet....

And what is the batter made of for a batter fried fish fillet?

I'd love a recipe for a mediteranian fish chowder... or a Boulibaise....

And how do you eat a whole crab anyway???

LOL!?

I wish someone would take a look at this thread.... and give me their wisdom.

Deep fry in hot oil......most people around here use peanut oil although we use canola.

I know how.....boy do I love boiled crab! But I don't think I could explain it. Maybe some day I'll get the chance to show you!

I just saw this thread too. I'm going to try both your recipes Val. Doctor says we need to eat more fish.
