it makes 2 servings and takes about l/2 hr. to make.

l tblsp. olive oil divided
l/4 cup diced onion
l garlic clove, minced
l/2 cup diced green bell pepper
3/4 cup canned crushed tomatoes
1 tblsp. white wine (optional)
4 pitted black olives, sliced
10 ounces cod fillets
Dash each salt and pepper

Garnish: 2 tsps. chopped fresh parsley
In l qt. sauce pan heat l tsp. oil: add onion and garlic and saute'
until onion is softened. Add green pepper and saute' for 3 minutes longer. Add tomatoes, wine, and olives: Cover and let simmer, stirring occasionally, for 10 minutes.
Sprinkle both sides of cod fillets with salt and pepper. In 9 inch skillet heat remaining 2 tsps. oil: add fish and cook for 3 to 4 minutes. Turn fish over and top with vegetable mixture: let simmer until fish flakes easily when tested with a fork and vegetables are hot..about 3 minutes..Transfer to platte and serve.
