Pizza in a Cast Iron Skillet
4 oz mushrooms, thinly sliced
1 small leek, use white and LIGHT green parts only, halved crosswise and lengthwise and thinly sliced
1 tbsp olive oil
kosher salt and pepper
1 lb pizza dough
1/4 cup pizza sauce
1/2 cup mozzarealla cheese
Heat oven to 425 degrees. In a large bowl toss mushrooms, leek, oil, 1/4 tsp salt and 1/4 tsp pepper. Shape the pizza dough into a 12" round and place in the bottom and slightly up the sides of a large 10 to 12" cast iron skillet. Spread pizza sauce over the dough leaving a 1/4" border. Top with vegetables and sprinkle with cheese. Bake till golden brown, about 20 to 25 minutes. Serves 4
