Southwest Grilled Cheese

Southwest Grilled Cheese

12 slices cheddar cheese
1 can diced green chiles
1 medium onion, sliced or diced
8 slices whole wheat bread

In a frying pan, put about a tablespoon olive oil or butter. On medium heat, place the sliced onions. Saute until the onions are carmelized. Add the green chiles to help release the bits in the pan. Place in a bowl. Wipe out the pan. On 2 slices of bread, spread softened butter on one side. Place the buttered side down. Place 3 slices of cheese, and 1/4 of the green chile and onion mixture. Top with the last piece of bread, buttered side up. Cover and cook on medium-low heat. After about 6-8 minutes, flip the sandwich and increase heat to medium. Cook 3-5 more minutes or until the bread is golden brown. Repeat 3 more times.
