Carrot Salad


  • We used to make this when I worked at the nursing home. This is a condensed version.

    It makes 6-8 servings

    2 cans sliced carrots
    1 can tomato soup
    1/4 cup cooking oil
    1/4 cup sugar or to taste
    1/4 cup vinegar.. I use white vinegar
    1 med onion
    1 med green pepper
    1 or 2 stalks celery

    Drain carrots & put in a large bowl. Slice the onion & green pepper into the carrots. Combine tomato soup, vinegar, oil & sugar in a sauce pan. Cook til hot but not boiling. Pour over the vegetables in the bowl & stir til mixed. Cover & chill well.. overnight is best.
