BLT Potato Salad

  • 3 large baking potatoes (3 pounds), peeled and chopped
    1 cup mayonnaise
    3 tbsp sweet pickle relish
    2 tbsp Dijon mustard
    1 tbsp chopped fresh parsley (optional)
    1 tsp pepper'
    1 cup grape tomatoes, halved
    3 green onions, snipped
    2 hard cooked eggs,chopped
    4 bacon slices, cooked and crumbled
    Boil potatoes 5 minutes or till tender. Drain and cool. Stir together remaining ingredients except bacon and toss till blended. Cover after you have mixed in potatoes. Stir in bacon just before serving. Chill at least 3 hours.

  • It was very good. I used turkey bacon. I will make this again. The only thing I might eliminate or cut back on next time is the sweet relish.
  • Some times I use a diced sweet pickle instead of the relish, whatever you have on hand!
