Strawberry Spinach Salad

This recipe was originally posted by Bilby in What's for Dinner May, 2013.

Strawberry Spinach Salad


1 10-oz. bag fresh baby spinach
1/2-1 small red onion, thinly sliced
1 medium cucumber, seeded and sliced (you can peel it first if you want)
1 pint strawberries, sliced
1 c. sliced almonds, toasted
Lemon and poppyseed dressing/vinaigrette
1/2 lb. grilled chicken breasts, sliced


Toss ingredients together and serve immediately.

You can also arrange the ingredients on individual plates for serving.


My serving suggestion is to slice chicken and place fanned out on top

of salad with toasted almonds sprinkled over.

I made individual salads and followed the recipe exactly. Good!! I do enjoy salads with fruit in them such as strawberries or oranges.
