Thumbs up Rice Salad

Rice Salad


serves 4
1 cup of uncooked rice (cook and cool)
Handfull of frozen corn nibblets and peas, cooked and cooled.
3 rashers of bacon diced, pan fried and cooled.
2 or 3 rings of pineapple chopped.
1/4 onion or 2 shallots sliced thinly
Fresh parsley sprig (dried if necessary)

Excluding the bacon the rest can be cooked in the micro and run under cold water to cool.
Toss altogether and pop in a bit of french dressing, and I grind in a bit of pepper.
All the ingredients are subject to amounts you personally like.
It's nice with half brown rice and half white rice just remember they have to be cooked separate as they cook at different rates.
I find I cook the rice when I have time in the morning and it's just popping the rest near dinner time and fridgerate.
If you wish when serving cut in half a couple of cherry tomatoes to pop on top and an extra sprig of parsley to decorate.

We enjoyed this salad. It was a nice change from pasta salad. Easy to make.

I'm glad Sharon, it's one of those salads that you put more or less of the things you like to make it your own. We more often than not put in extra bacon and pineapple
