Not Your Normal Tuna Salad (Low Carb)

Not Your Normal Tuna Salad (Low Carb)

2c. mixed salad greens
1/2 c. canned tuna, drained well
4 black olives, diced
2 mini dill pickles, sliced

Salad Dressing:

1/8 c. Red Wine Vinegar
2 shakes of Olive Oil
1 tsp spicy brown mustard
1/4 tsp. Italian herb seasoning--no salt or sugar added
Black pepper as desired

Shake. Pour on salad.

Love tuna salad been eating more since I started to eat Italian light tuna in olive oil. It is a little more expensive but the taste and texture is great in salads. Brings back memories when my uncle would come to visit for lunch and my mom would send me to buy the large can of his favorite Italian tuna at the corner grocery store & Italian bread. Now I keep a four pack always on hand for a quick lunch. Have been adding fresh moringa leaves for added nutrition & taste to the salads. Thanks for sharing this recipe too.
