November Recipe Tester Club

My gosh, it's Nov. already.
We are all set for another month of great recipes.

Our blue ribbon winner this week is DebbieF for her Cheesy Chicken Alfredo.

Our tester was Fish3711. She has won a tester icon for testing this recipe.

Congrats Debbie and Felicia.

Our blue ribbon winner for Nov 10th is futureteacher for her Mexican Chicken Soup.

Mexican Chicken Soup in a Slowcooker recipe.

I made it with all the same ingredients,they are all easy to find ingredients.The recipe was real easy to follow and put together.We really like this recipe,it will be a regular at our house.We eat alot of soup in the winter months,now I have a new one to put on the menu.
This is a really good soup and an easy recipe to make.

DeBora, I really enjoyed testing this recipe, (My family enjoyed it too)

I did make a few substitutions, some good and some bad.

I used pre-cooked jumbo shrimp, and cut them into cubes. That worked out fine, and it was what I had bought on sale.

Unfortunately, it seems that I cannot get Cream of Shrimp soup in my part of the country, so I substituted Cream of Celery, and added the juices from the defrosted shrimp. I honestly don't know if it would have made a difference.

I also substituted imitation crab meat ( Crab Delights) because the cost of the lump crab meat was out of my budget, but I do not recommend doing that because it gave the dish a slightly sweet flavor. Next time I'll splurge on the real thing.

I also had Peccorino Romano cheese instead of Parmesan, so I used a little less than the recipe called for and it was a nice cheesy flavor.

The casserole was very easy to assemble, and it looked very appetizing coming out of the oven. I served it over white rice, with fresh green beans on the side. The texture over the rice was very nice, and the taste reminded me of Seafood Newburgh, just with a thicker consistency.

If the recipe came out as well as it did with all my substitutions, I can only imagine how delicious it would be if prepared as written.

My family would definitely like to have this again, and I recommend it to you all.
