Question looking for a recipe

Hi, I am new to this forum and am looking for help with a recipe. We have had a DELICIOUS potato salad from our local Harris Teeter grocery store, called Low Country Potato Salad. Judging from the color, I am guessing that they use sweet potatos (yams) as it has a pinkish hue to it. But I have searched high and low on the web and cannot find anything that has that name, Low Country. Any thoughts on where else I could look? Anyone else every had this and know the ingredients? I would be ever thankful for some help.

I'm sorry but I haven't a clue about what you are describing. We don't have Harris Teeter grocery stores here in my neck of the country.

Also, I've never seen a potato salad with a pinkish hue to it.

However, now that your question as appeared in the Family Corner Exchange Newsletter, I'm sure someone will be popping by that can help you!

You might try searching for the company that distributes it. Usually it is marked on the label or lid. Like I was looking for Herbox chicken bouilion & it is distributed by Hormel Foods. I found Hormel Foods on the web. The name Low Country may be a subsiderary of that company. Hope this helps.

I found this on the web. It calls for red potatoes with the skin on so maybe that's what gives it the pinkish color.

Low Country Recipes

One of my friends is from Savannah, Georgia. On a trip to visit her family, I heard the term "Low Country" for the first time. It is a term used in that part of coastal Georgia. They have everything from low country bar-be-que to low country boils. Try searching for some recipes from that part of the state.

Potato Salad

When I was a youngster my mother and grandmother made potato salad that was pink in color. They used beet pickles and the juice to give it the unique color. I'm not sure of all the ingredients that are in the potato salad you purchase but we use potatoes, onions, salt, pepper, pickles, mustard & mayo in Oklahoma, and of course beets!
