Post Looking For A Brown Sugar Icing Recipe

Hi there

Years ago an elderly lady on my street brought me a rasberry cake with a brown sugar fudge like icing. It was so good and before I could ask for the recipe she moved away. If anyone has a recipe that would match this description I would love to have a copy. It reminded me of brown sugar fudge my mom used to make. Thanks

Brown Sugar Icing (Caramel Icing)

Brown Sugar Icing Or (Caramel Icing)

1 Lb. Box Lt. Brown Sugar
1 1/2 Sticks butter or margarine (not a spread)
9 Tbs. Evaporated Canned Milk
1 Tsp. Vanilla flavoring
1 Cup Chopped Pecans (opt)

Melt margarine (I use Land O' Lakes) It's a margarine and not a spread as some of the products we used to use as a margarine are now spreads. Add brown sugar and canned milk. Wash down sides of pan with a pastry brush dipped in water.
Stir often until it comes to a boil. Add tight fitting lid and turn down heat temp. cook for 3 minutes. Set off stove add vanilla. Let cool 10 to 15 minutes and beat. If you under beat it will be runny or if you over beat it will sugar. Add pecans and spread on cake.

I can hardly wait to try it out. Just to make sure , since we don't have land o lakes brand here, any margarine is okay??? Thanks again

Hi Debknechtel,

If, you use the *stick* margarine, you will be fine. Most of the *soft spreadable* margarine is not 100% oil based and many recipes need the full oil based, to keep the same consistancy.

Now, here is another recipe for Brown Sugar Frosting, that uses the Microwave and is ready in under 30 minutes. Not as much margarine is used, which may not be a bad thing. However, the MOST important aspect to any of these recipes, is that they TASTE like what you remember, right???!!!


Brown Sugar Frosting
Serves/Makes:1
Ready in: < 30 minutes
Difficulty: 3
(1=easiest :: hardest=5)

Categories:
Frosting


1/3 cup brown sugar, packed
2 tablespoons margarine
2 tablespoons milk
1 1/4 cup powdered sugar, ie. icing sugar
1/2 teaspoon vanilla




In bowl, combine brown sugar, margarine and milk; microwave at 100% (High) for 45 to 60 seconds until margarine has melted, sugar is dissolved and mixture boils. Stir in icing (powdered) sugar and vanilla. Let cool to lukewarm. Beat until thick enough to spread but not grainy. Mixture should hold imprint of spoon.

1 batch makes enough to frost one 8-inch cake or 1 dozen cupcakes.

Here is one my grandmother used!


4 tbsp butter
1/2 cup packed brown sugar
2 tbsp. milk
1 1/2 cups confectioners sugar
1 tbsp. unsweetened cocoa powder
1 tsp. vanilla extrasct

Melt butter and brown sugar over medium heat and stir till sugar is dissolved, then add milk. Bring to boil and remove from heat. Sift cocoa and confectiners sugar together and blend into butter mixture and add vanilla. If too thick add more milk a little at a time until desired consistency is reached. Spread quickly because this will set up fast!

Re. Brown Sugar Icing

You can use any brand of margarine, as long as it states margarine on the package. The reason not to use a spread is they incorporate air and water to make it lighter. It just will not do as well as the ones that has margarine stated on the package.
This has been learned by trial and error in 30 plus years baking for the public.
The recipe I gave above will frost 3 9 inch cake layers.

brown sugar frosting

Here is my recipe for brown sugar frosting:

PENUCHE FROSTING

1/2 cup butter
1 cup brown sugar
1/4 cup hot milk or cream
3 cups sifted powdered sugar
1 tsp vanilla

Melt butter and brown sugar. Boil, stirring, for 1 minute or until slightly thick. Cool 15 minutes.

Add hot milk and beat smooth. Beat in enough of the powdered sugar to make of spreading consistency. Frosts two 8- or 9- inch layers.


I hope you like this frosting. It is also good on spice cake.

I have not tried all the others yet but I'm working at it.....hard when I'm on a diet though
