Eggplant Frittata

  • INGREDIENTS~~1/2 medium eggplant-1/2 inch slices~~~Coarse salt~~~Cooking oil~~~2 small shallots, chopped~~~1 tablespoon of butter~~~5 eggs, beaten~~~1/4 cup sweet cream~~~1/2 crumbled cheese, salted~~~1 tablespoon of Parmesan cheese~~~2 scallions~~~~~~~~~~~~ 1. Sprinkle salt over eggplant and let sit 20 minutes. 2. shake the eggplant slices well to remove any salt or fluid from them. 3. Deep fry eggplant slices until soft and brown. 4. drain on paper towel. 5. lightly fry shallots in butter. 6. In bowl mix eggs, cream, and cheeses together, and pour into frying pan. 7. Pour the eggplant and scallion on top and gently stir. 8. Bake in oven for 15 minutes at 350......SERVE HOT..SERVES 4
